Growing up in a strong Jewish household with deep roots in Israel, Morocco, Turkey, and Egypt — Chef Rephael Russo was surrounded by cultures where food was always abundant, soulful, and central to life.

From a young age, he experienced food as more than sustenance: it was tradition, memory, and most importantly, a connection to his land and roots.

Training under celebrity Chef Yossi Shitrit, together with Executive Chef Nir Dalins, chef rephael russo learned to elevate heritage into art.

Later, he moved onto the notable Eleven Madison Park in New York, where he refined his craft with precision, seasonality, and restraint.

Today, under the name PARDÉS — the Hebrew word meaning “orchard” — chef rephael russo creates private chef dinners and fine dining experiences for curated events and private clients.

His cooking is a love letter to Israel and to his home: rooted in tradition, inspired by nature, and reimagined with elegance and creativity.
